Easy Chicken Lettuce Weaps
Y’all...these wraps are what dreams are made of ✨ They are everything you want in a weeknight dinner recipe.....easy, healthy & down right delicious! So Simple & so good. I found a similar recipe on TIK Tok but can’t find the link for the life of me - I can’t take total credit for the recipe but I did tweak it to make it my own 😊
Easy Chicken Lettuce Wraps (Serves: 4)
Ingredients
1 large onion, finely diced
1 Tbsp oil
1 lb ground chicken
3 cloves garlic, minced
1 Tbsp fresh ginger (or 1 tsp dried)
1 cup mushrooms, finely chopped
1 can water chestnuts, chopped
1 cup carrots, shredded
1 red bell pepper, finely sliced
2 Tbsp hoisin sauce
3 Tbsp low sodium soy sauce
1 Tbsp brown sugar
1 Tbsp rice vinegar
1 tsp sesame oil
1/2 tsp black pepper
1/2 tsp red pepper flakes

Directions
In a large frying pan or skillet,cook onion and oil over medium high heat until tender, about 5-6 minutes.
To the cooked onion, add in ground chicken. Use a spatula or flipper to break it into small chunks as it cooks. Cook until no longer pink, about 8-10 minutes.
Next, add in garlic cloves and ginger, stir to combine. Cook until fragrant, about a minute or so.
Add in all your chopped vegetables and cook until tender crisp.
In a small glass measuring cup, combine hoisin, soy sauce, brown sugar, vinegar, sesame oil and spices. Whisk to combine and set aside.
Once vegetables are tender, add sauce to skillet. Turn heat down to medium and let simmer, stirring occasionally.
To serve, add warm chicken mixture to freshly washed lettuce leaves, a tortilla or even over rice. Enjoy!
