Slow Cooker Pork Tenderloin

This recipe is straight up bonkers - so tender & so delicious! It takes *almost* no time to prepare. The best part? Let this bad boy simmer all day long & come home to a super delicious meal waiting for you!

I can't take any credit for this recipe - but thank you to Dinner at The Zoo for sharing. It's one of my go to recipes for sure! The only thing I changed is searing the meat before placing it in the slow cooker. It saves me time (and another pan to clean - ha!) I also don't make the gravy from the juices as she does, I choose to use it more of an au jus instead (just preference) but follow her link if you want to see how shes does it!

Slow Cooker Pork Tenderloin (Serves: 6)

Ingredients

- Around 2 lbs of pork tenderloin

- 1 tsp each, salt & pepper

- 2 tsp Italian seasoning

- 1 Tbsp olive oil

- 1 cup low chicken broth

- 1/4 cup low sodium soy sauce

- 2 Tbsp balsamic vinegar

- 2 Tbsp brown sugar

- 2 tsp minced garlic

Directions

1. Season the tenderloins all over with with salt, pepper and Italian seasoning. Place inside your slow cooker.

2. In a small bowl, mix together oil, chicken broth, soy sauce, balsamic vinegar, brown sugar and garlic. Stir together to combine and pour over the pork.

3. Cover your slow cooker and cook on low for 6-8 hours or high for 4 hours. I've done both and both temperatures work great!

4. Once cooked, remove tenderloins and let rest covered in foil on plate or cutting board. Strain the juices left behind using a colander and reserve for when you serve the pork.

5. Slice the pork and serve it up with mashed potatoes and roast veggies (my fave!). Drizzle over the juices for extra added flavour. YUM.
