Citrus Sugar Cookies


Sharing some of my favourite, easy & down right delicious simple spring desserts with you this week!

Starting off with these melt in your melt citrus sugar cookies. I found the recipe on Beth's blog (thank you!) & it's a keeper for sure! The only little tweak I made was adding lemon & lime since I had both on hand & LOVE that flavour combo 😍 They are super easy to make & are some of the best sugar cookies I've had. She recommends chilling the dough before baking & while it's a pain to have to wait a whole hour before devouring these cookies, it really makes a huge difference so don't skip this step.

These cookies are beyond tasty - whip up a batch & enjoy!

Citrus Sugar Cookies (Serves: 3 dozen)

Ingredients

- 1 cup unsalted butter at room temperature

- 1 3/4 cup sugar, divided

- Zest from 3 limes

- Juice from 1 lemon

- 1 large egg

- 3 cups all purpose flour

- 1 tsp baking soda

Directions

1. Beat together butter, 1 1/2 cup sugar and lime zest in a large mixing bowl and hand held mixer until thick and creamy (about 2 minutes)

2. Add in lemon juice and egg and continue to beat until combined.

3. Using a spatula, incorporate flour and baking soda until just mixed in, careful not to overmix!

4. Cover the bowl with plastic wrap and let rest in the fridge for up to 1 hour.

5. Once chilled, remove dough from the fridge and preheat oven to 350. Place remaining 1/4 cup of sugar in a small bowl and set aside. You will use this to roll the cookies in before baking.

6. Using a cookie scoop, form balls of dough and roll in sugar. Place on a cookie sheet lined with parchment, tin foil or baking sheet.

7. Bake for 11-13 minutes or until edges are golden brown in colour. Let cool for a few moments before removing from cookie sheet. Store in an air tight container for up to 1 week. Enjoy!
