Teriyaki Rice Bowl

WOW. I love the flavours in this teriyaki rice bowl 😍 Packed full with garlic & ginger, this sauce comes together along with tender vegetables & protein of your choice! I used sirloin steak but you can totally use chicken, shrimp/salmon or straight up veg 👍

If you want to add even more flavour, make a little extra sauce from the recipe below & marindae your protein for at least 30 minutes or up to 24 hours. This REALLY adds a ton of teriyaki flavour if that's your jam.

Serve with rice (my preference), rice noodles or as a delicious stir fry on its on. It's so versatile! YUMMY. There are more recipes in this series as well - find them here.

Teriyaki Rice Bowl (Serves: 4)

Ingredients

For the stir fry

- 1 lb protein of your choice (I used sirloin steak thinly sliced)

- 3 cups pre-cut vegetables (I used broccoli, carrots, onions, peppers, mushrooms & snap peas)

- 1 Tbsp olive oil

- Pre cooked rice or noodles

For the sauce

- 1/2 cup low sodium soy sauce

- 1/3 cup packed light brown sugar

- 2 Tbsp apple cider vinegar

- 1 Tbsp freshly grated ginger

- 1 tsp sesame oil

- 2 cloves garlic, minced

- 1 Tbsp corn starch

- 1 Tbsp warm water

- Salt, pepper & chili flake, to taste

Directions

1. In a large frying pan, cook desired protein over medium heat until cooked through. I sliced my sirloin steak very thin & cooked it for 5-8 minutes, until it was cooked medium (my preference). Remove from frying pan and set aside.

2. Wipe frying pan clean and add in 1 tablespoon of oil and vegetables. Cook over medium heat until tender crisp (about 5-8 minutes)...no one likes soggy veggies! Remove vegetables from pan and set aside.

3. In the same frying pan, add in soy sauce and brown sugar. Stir until sugar dissolves. Heat over medium-low heat. Add in vinegar, ginger and garlic. Simmer for 5-8 minutes until fragrant. Season with salt, pepper and chili flake to your liking.

4. In a small bowl, whisk together water and corn starch until dissolved. Add it to sauce simmering in your pan and whisk to incorporate. Bring to boil until mixture thickens. Add in cooked steak and vegetables and stir to combine everything together. Add to bowl over rice or noodles, top with chopped green onion and sesame seeds. Enjoy!
