Easy Slow Cooker Roast Beef


Sharing one of my most favourite recipes with you today! It's delicious, super versatile & the EASIEST recipe you could possibly ever make! Check out the adaptions below for 3 tasty ways to enjoy this slow cooker roast beef recipe. Hands down super tasty & super easy, it will be a crowd pleasing dinner at your house for sure!

Easy Slow Cooker Roast Beef (Serves: 6 - generous portions)

Ingredients

- 1 4-5 pound beef roast (I prefer chuck or rib roast for this recipe)

- 1 Tbsp olive oil

- 1/4 cup Montreal Steak Spice (Club House brand is what I use)

- 1 cup low sodium beef broth

Directions

1. Remove roast from packaging and place on cutting board. Rub roast all over with olive oil. Begin to sprinkle spice rub all over the roast, including the top, bottom and sides. Use your hands to press the rub onto the beef.

2. Use tongs to transfer roast to large frying pan. Over medium high heat, sear each side of the roast. This helps to lock in moisture, flavour and adds a nice crust to the roast. Each side is done when it's a golden brown colour (about 2-3 minutes per side).

3. Pour beef broth into slow cooker and place seared and seasoned roast in as well. Cook on low for up to 8 hours (for a well done roast) or up to 3 hours on high (for medium well). Play around with the cooking time depending on the doneness that you prefer!

Ways to Enjoy The Roast

1. Roast Beef Dinner

- Follow directions for roast beef above. To the slow cooker, add in 1 large chopped onion, 4 large peeled & chopped potatoes & 4 large peeled & chopped carrots. Cook time is the same as above.

- Remove roast and vegetables. Strain cooking liquid to remove and lumps and bumps. Place liquid in a small sauce pan and bring to a simmer. Reserve 1/4 cup of the liquid and whisk in 2 tablespoons of flour to make a slurry. Add slurry to simmering liquid and bring to boil until thick. Enjoy!

2. Philly Cheese Steak Sandwich

- Follow directions for roast beef above.

- In a large frying pan, saute 2 large sliced bell peppers, 1 large sliced onion in 1 tablespoon olive oil with 2 cloves minced garlic. Season with salt and pepper, cooking until tender.

- On a large bun or on 2 pieces of sandwich bread, place 2 pieces of cheese (monterey jack works best here!), desired amount of roast beef & vegetables. Use a panini press to grill sandwich or place open faced on a cookie sheet under LOW broil in your oven until cheese is melty and delicious. Enjoy!
