Pumpkin Spice Oatmeal Cookies


Can't stop won't stop baking, posting & enjoying anything pumpkin spice! It's definitely a favourite flavour of mine (duh) & so delicious!
Pumpkin Spice Oatmeal Cookies (Serves: 2 dozen cookies)
Ingredients

- 1 cup flour

- 1 1/2 tsp pumpkin spice (or mix of cinnamon, ginger, and nutmeg)

- 1/2 tsp baking soda

- 1/4 tsp salt

- 1/2 cup softened butter

- 1/2 cup brown sugar

- 1/2 cup white sugar

- 1 large egg yolk

- 1 tsp vanilla extract

- 6 Tbsp pumpkin puree not pumpkin pie filling

- 1 1/4 cups old-fashioned oats

Directions
  1. In a large bowl whisk together the flour, pumpkin spice, baking soda and salt.

  2. In a separate large bowl, beat together the butter, brown sugar and white sugar until fluffy.

  3. Mix in the egg yolk and vanilla extract. Beat in the pumpkin puree.

  4. With the mixer on low speed, mix the dry ingredients into the pumpkin batter.

  5. Mix in the oats.

  6. Cover the bowl with plastic wrap and chill in the fridge for 30 minutes.

  7. When ready to bake, preheat the oven to 350F degrees and line cookie sheets with parchment paper or silicone baking mats.

  8. Using a 1.5 tablespoon cookie scoop (or a spoon and your hands), scoop the dough, roll it into balls, and place 2 inches apart on the lined cookie sheets. Flatten each cookie down so that it's about 1/3 inch thick.

  9. Bake the cookies 1 sheet at a time on the middle rack of the preheated oven for about 8-10 minutes, or until the tops look just set.

  10. Cool on the cookie tray for at least 10 minutes before transferring to a wire rack.
