Citrus Beet Salad

This citrus beet salad is one of my all time favourites. Beets? Yep! Goat cheese? Of course! Citrus? You betcha! Topped with a light citrus vinaigrette and toasted almonds, this salad is perfectly sweet, creamy & super delicious! Plus, it’s easy too!! Hope you enjoy this salad as much as I do! Citrus Beet Salad Ingredients For the salad - 4 - 5 medium beets, peeled and chopped - 2 Tbsp olive oil - Salt & pepper, to taste - 1 head if lettuce (I like romaine/arugula mixture for this recipe) - 2 cups orange segments (about 2 large oranges) - 1/2 cup crumbled goat cheese - 1/4 cup toasted almonds For the vinaigrette - 1/4 cup fresh orange juice - 1/4 cup olive oil - 1 Tbsp honey - Pinch of dry mustard - Salt & pepper, to taste Directions 1. Preheat oven to 400 degrees. 2. Wash and chop beets. Place on lined baking sheet and drizzle with olive oil. Season with salt and pepper. Place in oven and roast until tender, about 35-40 minutes. Remove from the oven and let cool. 3. Wash and chop lettuce and add to large serving bowl. Chop oranges & crumble the goat cheese. Add to serving bowl as well. 4. To make the vinaigrette , add all ingredients into small mixing bowl or mason jar. Whisk or shake until combined and set aside. 5. Once beets have cooled to the touch, add them to large serving bowl and toss. Drizzle dressing and toss again to coat. 6. Too with toasted almonds and serve right away. Enjoy!
