Curry Vegetable Soup

If you're looking for a hearty, comforting & flavorful soup....look no further! This curry vegetable soup is BEYOND DELICIOUS! The mix of spices is perfect, giving off a nice heat from the curry and a fresh punch with the cilantro. Feel free to up any of the spices if you like it spicy 😊 I added in rice to mine as per my husbands request but if you're looking for a more low carb suitable option, omit it and instead add in some extra veggies. Still delicious if you ask me!

Curry Vegetable Soup

Ingredients: - 1 Tbsp olive oil

- 1/2 large sweet potato, peeled and diced (about 2 cups)

- 2 large carrots, peeled and diced

- 1 large onion, diced

- 1 clove garlic, minced

- 4 cups vegetable broth

- 1/2 tsp of each; curry, garam masala, ginger

- 3 large bell peppers, seeded and diced

- 1-14 oz can chickpeas, drained

- 1/2 cup cilantro, chopped

- 1-14 oz can coconut milk

- 1 cup rice, cooked (I used basmati but use whatever you like!)

- salt and pepper, to taste

Directions:

1. In a large soup pot, add in olive oil, sweet potatoes, carrots, onion and garlic. Saute for 5 minutes over medium high heat until vegetables have some colour and onions become translucent. Add in the spices and saute for 3 more minutes.

2. Add in all of your vegetable broth and lower heat to a simmer. Boil until vegetables are tender enough to pierce with a fork (about 10-12 minutes).

3. Once tender, remove from the stove and insert immersion blender*. Puree soup until smooth consistency or leave it a little chunky, it will be delicious either way!

4. Return pot back to the stove and over medium high heat, add in bell peppers and chick peas.Cook for about 5-7 minutes until peppers begin to soften.

5. Stir in cilantro and coconut milk. Soup will begin to come together and smell amazing. Continue to stir until flavours are incorporated and entire soup is heated through. Season with salt and pepper to your liking.

6. To serve, add in desired amount of rice to bowl and top with soup. Add in additional cilantro if you wish. Serve warm and enjoy!

Notes:

* You can also use a blender to puree your soup. Just be careful as it will be very hot!
