Cheesy Hash Brown Waffles

Looking for a delicious spin on a classic brunch dish? Look no further! These cheesy, crispy & savory waffles are DELISH. They come together pretty quickly and require only a few ingredients I bet you have on hand already. Top with extra cheese, crispy bacon, sour cream or green onions for a tasty brunch treat I know you'll enjoy 😊
For this recipe I used my Cuisinart WAF-200C Waffle Maker (found here). It cooks evenly, is easy to clean & produces a nice, even & crispy crust on your waffles. A must for my kitchen!
Cheesy Hash Brown Waffles (makes 2 large waffles)
Ingredients
- 2 large russet potatoes, shredded
- 3 large eggs
- 1/4 cup milk
- 1 tsp each: salt, pepper, garlic powder
- 1 1/2 cup shredded cheese (I used cheddar)
- 1/4 cup green onions, sliced
- Extra cheese, sour cream, bacon or green onions for garnish (optional)
Directions
1. Begin by shredded potatoes into large bowl. Line a colander with paper towel or clean dish towel and place shredded potatoes inside.. Bring up the sides of paper or dish towel and squeeze until excess water is removed. Transfer back into large bowl.
2. To the shredded hash browns, add in eggs, milk, seasonings and cheese. Mix until ingredients are combined. Sprinkle in green onions and stir.
3. Prepare waffle maker. Mine has 4 temperature settings and I preheated mine to the 2nd temperature setting. Once warm, use a generous amount of cooking spray or melted butter to coat the iron. This step is a MUST! It will be almost impossible to remove if you skip this step!
4. Once preheated and greased, place 1/4 cup of mixture into each of the 4 corners of your waffle maker. Use the back of a wooden spoon or bottom of your measuring cup to spread evenly throughout the waffle maker.
5.Close the lid and let cook. Mine took about 5-6 minutes per waffle. Wait until the timer signals it's done before removing.
6. Place on plate and cover with tin foil to keep warm or place in preheated oven on warm.
7. Serve with additional garnishes. Serve warm. Enjoy!
