Mini Egg Blondie Bars

Now, would it even be Easter if I didn't post a Mini Eggs dessert?! I've got to admit that I do really enjoy these tasty treats & get so excited when I see them in stores at the start of the season! Whether in cheesecakes, cookies or on their own, Mini Eggs are delicious & super easy to bake with!

I've shared another blondie bar recipes here - it's one of my favourite recipes to whip up! Simple ingredients, short bake time...what more could you want?! I made a pan on Sunday and it looks like I'll be making another one (or 2!) this weekend...oops!

Mini Egg Blondie Bars

Ingredients

- 1/2 cup unsalted butter melted - 1 large egg - 1 cup light brown sugar, packed - 1 tablespoon vanilla extract - 1 cup all-purpose flour - about 18 Oreo Cookies, coarsely chopped - 1 cup Mini Eggs, divided

Directions
  1. Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside.

  2. In a large, microwave-safe bowl melt the butter, about 1 minute on high power.

  3. Wait momentarily before adding the egg so you don’t scramble it. Add the egg, brown sugar, vanilla, and whisk until smooth.

  4. Add the flour and stir until just combined, don’t overmix.

  5. Stir in the Oreos and 1/2 cup of coarsely chopped Mini Eggs.

  6. Turn batter out into prepared pan, smoothing the top lightly with a spatula.

  7. Evenly sprinkle the remaining 1/2 cup of whole Mini Eggs over the top, lightly pressing them down with your finger or a spatula.

  8. Bake for about 20 to 22 minutes, or until done based on add-ins used. Top should be set and edges slightly firm.

  9. Remove from the pan and slice into small bars. Enjoy!
