Creamy Lemon Crumb Bars

Hello, lovelies! Happy Monday! I'm already thinking ahead to Easter weekend (which is so soon, BTW) and will be sharing some super delicious dessert ideas over the next few days!
Spring desserts to me are just way too delicious. Think lemon. Think fresh flavours. Think mini eggs (yup š). Just a few hints for what's coming your way this week!
Today's recipe comes from Dinner Then Dessert and it's definitely a keeper! Super easy to make & beyond delicious!
Creamy Lemon Crumb Bars (from Dinner Then Dessert)
Ingredients
- 1 1/4 cup flour
- 1 1/4 cup rolled oats
- 1/2 tsp baking soda
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 3/4 cup butter, melted
- 1 tsp vanilla extract
- 1-14 oz can sweetened condensed milk
- 2 Tbsp lemon zest
- 1/2 fresh lemon juice (about 2 whole lemons)
- 2 egg yolks
Directions
1. Preheat your oven to 350. Line a 8X8 baking pan with tin foil.
2. In a large bowl, mix together flour, oats and baking soda.
3. Add in both sugars and mic together.
4. Stir in vanilla and melted butter to the dry ingredients.
5. Separate the mixture and press half of the mix into your prepared baking pan. Bake for 15 minutes.
6. While your crust is in the oven. add condensed milk, lemon zest, lemon juice and egg yolks to large mixing bowl. Whisk until mixed together.
7. Remove crust from the oven and add creamy lemon mixture on top. Drop small dollops of the mixture and spread evenly along the crust.
8. Take the remaining dry mixture and crumble it onto the top of your dessert.
9. Place back in the oven and bake for 20 minutes more or until an inserted toothpick comes out clean.
10. Let cool in the pan for 15 minutes then transfer to the fridge to set.
11. Slice into bars and enjoy! So delicious!
