Buffalo Chicken Stuffed Sweet Potatoes

This recipe is so simple, so good, so delicious!
If you're a chicken wing fan, I can guarantee this recipe will become a new favorite of yours in no time! The best part is the creaminess comes from Greek yogurt so this is really all the chicken wing taste without any of the guilt!
Buffalo Chicken Stuffed Sweet Potatoes
Ingredients
3 large sweet potatoes, washed and rinsed
1 large rotisserie chicken OR 2 large chicken breasts, cooked
1/3 cup Franks Buffalo Sauce
1/3 cup plain Greek yogurt
1/3 cup shredded cheese (I used cheddar)
Additional toppings: crumbled bacon, blue cheese, celery bits, cheddar cheese
Directions
Roast sweet potatoes on baking sheet at 450 degrees for around 40 minutes (or until they can easily be sliced through).
While they bake, take chicken and shred or cut into bite sized pieces.
Mix chicken, buffalo sauce, Greek yogurt and cheese together until combined.
Once potatoes are cooked, allow to cool for about 5 minutes.
Carefully cut potatoes in half (they will be steamy!) and scoop out some of the flesh to make a well.
Fill in well with chicken mixture. Top with cheese if you wish.
Place in oven under low broil until heated through and cheese is melty and delicious.
Add any additional toppings and enjoy this easy dinner!
