Slow Cooker French Onion Soup


I. Love. This. Soup. Warm & comforting, cheesy & rich...it's like giving your stomach a hug! With only a handful of ingredients, this soup comes together in no time with your slow cooker doing all the hard work!

I always thought French Onion soup would a labour of love to make but I was surprised at how easy (and delicious!) it was! This recipe is a combination of 3 or 4 different ones I had looked at (and will link them shortly).

Slow Cooker French Onion Soup (Serves: 6)

Ingredients

  • 2 tablespoons butter

  • 3 cups of sliced onions (I used white but use what you have)

  • 2 cloves of garlic, minced

  • 1/2 cup red wine

  • 4 cups beef broth

  • 1 cup crusty bread (a day old baguette works great)

  • 6 slices provolone (or your favourite soft cheese!)

  • Salt and pepper to taste

Directions

1. Slice onions and add to slow cooker. Add in butter, garlic and red wine. Season with salt and pepper. Stir to combine. Cook on low for 7-8 hours.*

2. Add beef broth to slow cooker and simmer for 1 hour.

3. Place chunks of bread in each oven proof bowl. Ladle soup on top and top with cheese.

4. Broil on low until gooey, melty and delicious!

5. Serve warm and enjoy!
